It’s time to relax with summer cocktails and to up your bacon game.  That’s why I’ve come up with this chilled bacon cocktail recipe, perfect for any last minute barbeques and to celebrate the last throes of the season. Instead of the typical maple syrup that punctuates a lot of these cocktail recipes, I’ve swapped in a healthier agave syrup that’s complemented by the smokiness of ButcherBox uncured bacon morsels. Top it all of with off with a slice of candied bacon (you can find the recipe here on our YouTube channel). Anyone for some bacon and chill?

Ingredients (11):

  • 4 slices ButcherBox Bacon
  • 3oz tequila
  • ½ c agave syrup
  • ½ c water
  • 3 Tbsp fresh basil, roughly chopped
  • ½ jalapeno, sliced and seeds removed
  • 2 slices cucumber
  • 4 oz fresh lime juice
  • 1 Tbsp Tajin
  • 2 fresh basil leaves for garnish
  • ice cubes

Directions:

  1. Place bacon strips on tray and bake in 425°F non-preheated oven until crispy.
  2. Remove bacon strips from oven and rest on paper towel to become crispy. Gently pat dry to remove excess fat.
  3. Combine agave, water, basil and jalapeño in a small saucepan. Crumble 1 cooked bacon strip into mixture.
  4. Simmer on low heat for 15 min.
  5. Strain completely and chill thoroughly.
  6. Place agave mixture in cocktail shaker. Add tequila, lime juice, and cucumber slices. Muddle well.
  7. Add ice cubes and shake vigorously.
  8. Strain over ice cubes. Crumble remaining bacon strips. Garnish with basil leaves and crumbled bacon. Salt the rim with Tajin. Finish it off with a slice of candied bacon - follow this recipe for candied bacon, also by me. Bottoms up!
