Salt & Pepper Roasted Pork Sirloin with Broccoli & Cauliflower Latkes

A super simple roast for a delicious cut of pork paired with a lighter version of the classic potato latke. This will become a go-to recipe!

Ingredients (10):

  • 2 ButcherBox Pork Sirloin Roasts
  • 1 ½ c cauliflower ‘rice’
  • 1 ½ c broccoli ‘rice’
  • ⅔ c onion, minced
  • 4 eggs
  • 1 c coconut flour
  • ½ c Parmesan cheese, grated
  • 4 Tbsp coconut oil
  • 2 Tbsp coarse kosher salt
  • 2 Tbsp freshly ground black pepper

Directions:

  1. Preheat oven to 250°F. Season pork on all sides with 1 Tbsp each of salt and pepper and roast in oven until internal temperature is 135°F, about 1 1/2 hours.
  2. Remove from oven and turn oven to 425°F. Roast pork an additional 10 minutes, or until a thermometer inserted into the thickest part reads 145°F. Let rest 8 min before slicing and serving.
  3. Mix cauliflower, broccoli, onions, coconut flour, eggs, Parmesan, salt and pepper in bowl and let sit 10 min.
  4. Preheat non-stick skillet on medium heat and add 2 Tbsp coconut oil.
  5. Using a soup spoon or 1 oz scoop, make little patties in the oil.
  6. Cook latkes for 2 - 3 min per side until golden brown, and set on sheet pan. Finish in 350°F oven for 10 min.
