In honor of St Patrick’s Day, here’s a Paleo version of Irish colcannon that you can eat all year long! Instead of the traditional mashed potatoes and cabbage, our colcannon contains cauliflower, kale, and delicious bacon! Perfect to serve alongside some super Irish corned beef! P.S. – add some shaved green onions for extra flavor!

Ingredients (6):

  • 5 slices ButcherBox bacon, cut into ½” strips
  • 2 heads cauliflower, cut into florets
  • 1 bunch kale, ribs removed and roughly chopped
  • ½ c chicken stock (substitute with heavy cream or coconut milk for Keto if you want added fat)
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper

Directions:

  1. Place cauliflower florets in steaming basket. If you don't have a steaming basket, create a DIY version using foil or a sieve. Steam for 7 mins or until fork-tender.
  2. While cauliflower is steaming, preheat sauté pan over medium-high heat and sauté bacon for 4 min, or until golden. Add kale and sauté for another 4 min.
  3. Remove cauliflower from steaming basket and place in food processor along with the chicken stock or other liquid of your choice. Puree in food processor. Once cauliflower puree is smooth, scoop out into large mixing bowl.
  4. Add wilted kale and bacon to puree and mix to combine.
  5. Season to taste with kosher salt and freshly ground black pepper. Enjoy!
