Grilled Boneless Pork Chops with Red Pepper Romesco

Rather than alter the flavor of the pork with a marinade or rub, I prefer these chops grilled simply and paired with a flavorful sauce that compli-ments their natural earthiness. This red pepper romesco is the perfect compliment to ButcherBox tender and juicy pork.

Ingredients (12):

  • 1 pack ButcherBox boneless pork chops
  • 3 Tbsp extra virgin olive oil
  • salt and pepper to taste
  • 1 c roasted unsalted almonds
  • 12 oz roasted peppers
  • ½ c fresh basil, rough chopped
  • 2 cloves garlic
  • 3 roma tomatoes, cores removed
  • 3 Tbsp red wine vinegar
  • 2 Tbsp extra virgin olive oil
  • 1 Tbsp salt
  • 1 Tbsp black pepper

Directions:

  1. Preheat grill with two zones, one as hot as possible and one low.
  2. Place pork on rack and brush with olive oil, then sprinkle liberally with salt and pepper.
  3. Place pork chops on hottest part of grill at a 45° angle to the grill grates.
  4. Grill for 4 min with a 90° turn after 2 min. Flip chops over and cook 2 more min. Move chops to low heat area, close grill and cook until internal temperature is 145°F.
  5. Allow chops to rest for 8 min before slicing or serving.
  6. Put all remaining ingredients into food processor and pulse gently until you have a nice paste.
  7. Spoon romesco over chops and enjoy!
