Chipotle Orange Pork Loin with Sweet Potatoes and Green Beans

Sometimes it’s hard to come up with new recipes for meal prep purposes – especially easy ones that don’t require much effort. That’s where the slow-cooker a.k.a crock-pot comes in; alternatively, you could use an Instant Pot to do all the cooking. This recipe uses flavors of citrus topped off with heat from the peppers, which all gets soaked up nicely by the pork and green beans. For additional carbs, I’d recommend some simple mashed potatoes on the side. Best of all, everything is gluten-free! To prepare your meals for the week, allow all items to cool before portioning.

Ingredients (11):

  • 1 ButcherBox center cut pork loin
  • 1 Tbsp olive oil
  • ½ c orange juice
  • 2 Tbsp chipotle with adobo, chopped
  • 3 oranges, cut into wedges
  • 1 can (14.5oz) diced tomatoes, strained
  • 2 sweet potatoes, peeled, large dice
  • 6 cloves garlic, minced
  • 1 Tbsp kosher salt
  • 1 Tbsp freshly ground black pepper
  • 12oz. green beans, snipped

Directions:

  1. Pat pork loin dry with paper towel. Rub with minced garlic, kosher salt and freshly ground black pepper.
  2. Preheat sautè pan. Once hot, add olive oil and sear pork loin on all sides for 3 min.
  3. Place sweet potatoes in bottom of slow-cooker.
  4. Place seared pork loin on top of sweet potatoes.
  5. Mix together orange juice, orange wedges, diced tomatoes, chipotle peppers and adobo in a small bowl, then pour over pork loin.
  6. Cook for 4 hrs on low setting. Remove pork loin and let rest on sheet pan with wire rack.
  7. Add green beans to slow cooker and cook on low setting for 5 min.
  8. Once green beans are tender, remove from slow-cooker and serve with sliced pork loin. Enjoy!
