Chipotle Orange Pork Loin with Sweet Potatoes and Green Beans
Sometimes it’s hard to come up with new recipes for meal prep purposes – especially easy ones that don’t require much effort. That’s where the slow-cooker a.k.a crock-pot comes in; alternatively, you could use an Instant Pot to do all the cooking. This recipe uses flavors of citrus topped off with heat from the peppers, which all gets soaked up nicely by the pork and green beans. For additional carbs, I’d recommend some simple mashed potatoes on the side. Best of all, everything is gluten-free! To prepare your meals for the week, allow all items to cool before portioning.
