Cauliflower Bacon Soup

Winter comfort food should always involve easy soups and bacon. This cauliflower bacon soup is not only super tasty but totally customizable — make it as creamy or smooth as you like. We made ours chunky! To make it low-carb, just nix the potatoes. We bet this is going to become one of your favorite recipes for soup! Also, it’s totally gluten-free!

 

Ingredients (7):

  • 6 slices ButcherBox Bacon, medium dice
  • ½ c onion, small dice
  • 2 c russet potatoes, peeled, medium dice
  • 1 head cauliflower, cut into small florets
  • 6 c vegetable broth or substitute with water/chicken stock/milk
  • 1 tsp kosher salt
  • ½ tsp freshly ground black pepper

Directions:

  1. Preheat a large pot/Dutch oven/saucepan over medium-low heat. Once pot is hot, sauté bacon and onions for 5 min.
  2. Add remaining ingredients and simmer for 35-45 min, or until potatoes and cauliflower are fork-tender.
  3. Using an immersion blender or even a potato masher, puree/mash until the vegetables are in extra small chunks. If you prefer a smoother soup, puree with immersion blender for slightly longer, or you can use a regular blender. For a creamier soup, substitute either half or all of the vegetable stock with milk or coconut milk.
  4. Season to taste with extra kosher salt and freshly ground black pepper if needed.
  5. Serve cauliflower bacon soup with a simple green salad for a light dinner or lunch. Enjoy!
