Tarragon and 3 Apple Chicken Salad

On days when I haven’t brought lunch to work, I often find myself standing at a salad bar, not really looking forward to the standard mixed greens or trendy grain bowls. That’s when I regret not packing my own easy, delicious and nutritious salad – much like this one. Flavored with a taste of spring, this salad is packed with healthy fats, carbs and protein.

Ingredients (23):

  • 1 pack ButcherBox Boneless Skinless Chicken Breasts
  • Marinade
  • 1 c white wine (preferred: with stone fruit notes)
  • 2 cloves garlic, sliced
  • ¼ c olive oil (preferred: Jenin-Palestine olive oil from Salt & Olive)
  • 1 tsp kosher salt
  • ¼ tsp freshly ground black pepper
  • Tarragon Mustard Vinaigrette
  • ¼ c tarragon vinegar (or substitute with white wine vinegar)
  • 1 Tbsp tarragon, roughly chopped
  • ½ tsp kosher salt
  • ⅛ tsp ground black pepper
  • 2 tsp grainy Dijon mustard
  • 1 Tbsp mayonnaise
  • ½ shallot, roughly chopped
  • ¼ c avocado oil
  • Salad
  • 1 Gala apple, medium dice
  • 1 Honeycrisp apple, medium dice
  • 1 Granny Smith apple, medium dice
  • 2 stalks celery, medium dice
  • 1 Tbsp tarragon, finely chopped
  • ¼ c toasted pistachios, roughly chopped

Directions:

  1. Mix all ingredients for marinade together and pour over chicken into resealable, leak-proof bag. Refrigerate overnight.
  2. Preheat oven to 375°F.
  3. Remove chicken from marinade and pat dry. Place on lined baking sheet, then drizzle with olive oil and season with salt and pepper.
  4. Roast chicken for 30 min, or until meat thermometer inserted into thickest part reads 165°F. Let the chicken cool to room temperature before cutting (medium dice).
  5. Combine all ingredients except avocado oil in a food processor.
  6. Pulse for 1 min. On low speed, drizzle in avocado oil.
  7. Toss chicken and all salad ingredients in a mixing bowl. Dress with tarragon mustard vinaigrette.
  8. Serve with favorite greens or as a sandwich.
