Smoky Citrus Grilled Chicken Thighs

If you’re grilling this summer, I assume you’re searching for the best grilling recipes. Look no further than these deliciously smoky grilled chicken thighs marinated with citrus and herbs. You could use this tasty marinade for any cut of chicken, eg. chicken breasts, but I love chicken thighs for their ultra-juicy and flavorful dark meat. Serve with a side of healthy slaw or potato salad!

Ingredients (11):

  • 3 packs ButcherBox Boneless Skinless Chicken Thighs
  • ½ orange (yes, the whole thing!)
  • ½ lemon
  • ½ lime
  • ¼ c rosemary, chopped
  • ¼ c thyme, chopped
  • 1 onion, chopped
  • ¼ c garlic, minced
  • ½ c extra-virgin olive oil
  • kosher salt and freshly ground black pepper to taste
  • 1 c hickory wood chips

Directions:

  1. Preheat charcoal grill with coals placed on one side of grill.
  2. Place orange, lemon, lime, thyme, rosemary, onion and garlic in food processor and puree on high.
  3. Add extra-virgin olive oil in steady drizzle and puree until thick paste forms.
  4. Place boneless skinless chicken thighs in a large bowl. Coat with marinade and season generously with kosher salt and freshly ground black pepper.
  5. Place hickory wood chips directly on coals and place chicken thighs on preheated grill surface over coal area.
  6. Cover grill and grill for 2 min. Turn chicken thighs 90°, cover grill and grill for 1 more min.
  7. Flip chicken, cover grill and grill 2 more min. Move chicken to cool part of grill, cover and continue cooking until internal temperature on instant-read thermometer registers 165°F.
  8. Let rest at room temperature for least 5 min before cutting or serving.
