This curried shepherd’s pie is a lighter, Indian-inspired take on the traditional shepherd’s pie. The curry powder and other Indian spices add complexity to the ground beef mixture, and the sweet potato/cauliflower topping is perfect for a lower carb count. Gluten-free and Paleo-friendly. 

Ingredients (19):

  • Meat Filling
  • 1 ButcherBox Ground Beef
  • 1 c butternut squash, small dice
  • 1 c green peas (if frozen do not thaw)
  • 1 can (15½oz) garbanzo beans
  • 1 can (14½oz) diced tomatoes
  • 1 medium yellow onion, small dice
  • 4 garlic cloves, minced
  • 1 tsp curry powder
  • 1 tsp garam masala
  • 1 Tbsp tomato paste
  • 2 tsp kosher salt
  • ⅓ c beef stock
  • Cauliflower Topping
  • 1 cauliflower
  • 1 large sweet potato
  • ½ tsp curry powder
  • ½ tsp freshly ground black pepper
  • 1 tsp kosher salt

Directions:

  1. Preheat oven to 350°F.
  2. Rinse sweet potatoes, poke twice with a fork and place on baking sheet. Roast in oven for 1 hr or until fork-tender. Once cooled, peel off skin. Leave oven heated at 350°F.
  3. While sweet potatoes are roasting, cut up cauliflower and place in steaming basket. If you don't have a steaming basket, create a DIY version using foil or a sieve. Steam cauliflower for 10 min, or until very soft.
  4. Place cooked cauliflower, peeled sweet potato, and remaining ingredients in a large mixing bowl. Mix until smooth with electric mixer or pass through using ricer/potato masher. Set aside.
  5. For meat filling: Preheat sauté pan. Crumble ground beef into hot pan, and sauté for 4 min or until slightly pink. Drain liquid.
  6. Return meat to pan and add garlic, onion, butternut squash and spices. Sauté until onions are translucent.
  7. Add tomatoes, tomato paste and beef broth mix, and cook for 3 min.
  8. Add peas and garbanzo beans. Mix everything together and pour meat mixture into a large baking dish or casserole dish.
  9. Spread the mashed cauliflower and sweet potato mixture evenly on top of meat mixture.
  10. Bake for 30 min in preheated 350°F oven. Remove from oven and enjoy!
