One Pot Beef Brisket with Apricots

This fork-tender one pot beef brisket is perfect for Sunday dinner. Featuring our hearty 3½  lb brisket, this recipe provides a complex spice profile accompanied by the subtle sweetness of apricot — with only 10 minutes of prep time! Serve drenched in sauce alongside mashed potatoes or potato kugel.

Ingredients (15):

  • 1 ButcherBox Brisket (3½ lbs)
  • The Rub
  • 1 Tbsp cumin
  • 1 Tbsp smoked paprika
  • 1 Tbsp garlic powder
  • 1 Tbsp freshly ground black pepper
  • 2 Tbsp kosher salt
  • The Braise
  • 2 Tbsp avocado oil
  • 1 medium onion, diced
  • ¼ c tomato paste
  • ¼ c whole grain mustard
  • ¼ c white balsamic vinegar
  • 2 c dried apricots
  • 3 c apricot nectar

Directions:

  1. Preheat Dutch oven on stovetop over medium-high heat and preheat oven to 325°F.
  2. Mix all rub ingredients and coat brisket well all over.
  3. Add avocado oil to pan and sear brisket on all sides, for 2 minutes per side until browned.
  4. Move brisket to side of pan, and add onions. Sauté until lightly browned, about 2 minutes.
  5. Add tomato paste and stir for 30 seconds. Add mustard and stir to combine with onions.
  6. Deglaze with white balsamic, scraping the bottom of the pan to loosen the browned bits.
  7. Add apricots and apricot juice and place brisket in center of pan.
  8. Close lid tightly and place in preheated oven. Cook for 4 hours.
  9. Test doneness by inserting a thin knife into brisket - it should slide in smoothly.
  10. Let brisket rest in juices for 30 minutes before slicing against the grain.
  11. Serve with braising liquid as sauce and enjoy!
