Honey & Sea Salt Ranch Steaks with Rainbow Carrots

This recipe was inspired by one of our early ButcherBox fans, who was excited to show us his favorite honey-glazed steak. Chef Yankel was skeptical at first, but this recipe proved to be worth its (sea) salt! The result is a tantalizing mix of caramelized and salty flavors, complemented perfectly by the sweetness of oven-roasted carrots. The steaks work great pan-seared too!

Ingredients (13):

  • 2 ButcherBox Ranch Steaks
  • 1 Tbsp raw honey
  • 1 Tbsp coarse sea salt
  • 1 tsp freshly ground black pepper
  • 6 rainbow carrots, peeled
  • 4 sprigs thyme
  • 3 cloves garlic, minced
  • orange zest
  • ground coriander
  • 1 Tbsp raw honey
  • 2 Tbsp extra virgin olive oil
  • coarse sea salt
  • freshly ground black pepper

Directions:

  1. Rub Ranch Steaks all over with salt, then refrigerate uncovered on wire rack overnight.
  2. On day of cooking, coat steaks with raw honey, then pepper and coarse sea salt. Refrigerate marinated steaks for at least 1 hr, then let rest on the counter for 30 - 45 min until they reach room temperature.
  3. Preheat oven to 350°F.
  4. Toss carrots with remaining ingredients and a sprinkle of salt. Place in roasting pan and roast in oven for 40 min, or until a fork slips in easily. Turn oven to broil and broil for 1 minute or until tops are browned. Remove from oven and set aside.
  5. Preheat grill. If using open flame, wait for flames to die down. Right before grilling, make sure grill surface is extremely hot, then rub it down with an oil-soaked rag – we advise using tongs to hold the rolled-up rag.
  6. For medium-rare, place steak at 45° angle across hottest part of grill grates, then grill for 2 - 3 min per side, while rotating 90° every 1 ½ min. Keep your meat moving to ensure that it cooks evenly. Remove from grill when meat thermometer inserted into thickest part reads 120°F.
  7. Rest for at least 8 min. Slice thinly against the grain.
  8. Platter alongside carrots and enjoy!
