This beefy wild rice soup recipe one to stash away in your recipe box for repeated use. It doesn’t take much to prepare this delicious soup, yet it’ll keep you full and nourished for days – in both summer and winter. For added flavor, you could sear the beef prior to slow-cooking, or do everything in a Dutch oven.

 

Ingredients (12):

  • 1 pack ButcherBox Premium Steak Tips
  • ¾ c wild rice blend (preferred blend of white, brown, wild and red rice)
  • 1 carton (32 oz) beef stock
  • kosher salt
  • freshly ground black pepper
  • 1 can (14½ oz) diced tomatoes
  • 2 carrots, ¼” slice
  • 2 stalks celery, ¼” slice
  • 1 c green beans, cut into ¼” pieces
  • 1 small onion, diced
  • 7 sprigs fresh thyme, leaves picked
  • 1 bay leaf

Directions:

  1. Place all ingredients in slow-cooker. Stir, cover and cook on low setting for 8 hrs or on high setting for 4 hrs. Enjoy!
