Eggplant Sloppy Joes

In an ideal world, sloppy joes wouldn’t leave you in a food coma. Well, I’m proud to introduce you to the healthy version you’ve been waiting for. Instead of high-carb burger buns, make the even tastier alternative of baked eggplant slices to cover that tender, messy beef.

Ingredients (15):

  • 1 pack ButcherBox Ground Beef
  • 1 poblano pepper, medium dice
  • 1 small yellow onion, medium dice
  • 3 cloves garlic, minced
  • 1 can tomato sauce (15oz)
  • ½ c Paleo ketchup
  • ½ c white wine vinegar
  • 2 tsp dry mustard
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • 1 tsp onion powder
  • 2 tsp garlic powder
  • ½ tsp cumin
  • ⅛ c honey
  • 2 eggplants, into 8-12 round 1” slices

Directions:

  1. Preheat sauté pan and add 1 Tbsp olive oil. Once oil is hot, add onions, garlic and poblano pepper. Sauté for 4 min.
  2. Add ground beef to onions and sauté for 3-4 min, stirring until evenly browned. Drain excess fat, and return meat/onion mixture to pan.
  3. Add the rest of the ingredients and simmer for 20 min.
  4. Preheat oven to 350°F.
  5. Toss eggplant with olive oil, salt and pepper. Sear both sides for 3 min per side in a hot grill pan or sauté pan.
  6. Place eggplant on baking sheet pan and bake for 5 min.
  7. Remove eggplant from oven, and let cool for 3 min. Assemble sloppy joes, using the eggplant slices to sandwich the meat mixture. You’ll need a fork and knife for this one. Enjoy!
