Dijon Garlic Smoked Sirloin Kebobs

Nothing says summer grilling like beef shish kebob! ButcherBox sirloin tips are basically tender steak chunks that’ll absorb any yummy marinade quickly and easily, especially this one made of garlicky Dijon mustard. I suggest a bowl of fluffy wild rice on the side, along with beer in a cold, frosted glass.

Ingredients (14):

  • 1 pack ButcherBox Sirloin Tips
  • ½ c Dijon mustard
  • ¼ c garlic, minced
  • ¼ c thyme, chopped
  • ¼ c parsley, chopped
  • 2 Tbsp smoked paprika
  • 2 Japanese eggplant, cut into 1” rounds
  • 1 orange bell pepper (green peppers and red peppers work fine too!), cut into 1” squares
  • 1 red onion, cut into 1” squares
  • 4 baby bella mushrooms
  • kosher salt and freshly ground black pepper to taste
  • 4 individual 12” skewers
  • 1 c hickory wood chips
  • 1 cast-iron smoking box

Directions:

  1. Preheat one side of grill on high heat.
  2. If using wooden skewers or bamboo skewers, soak skewers in water for at least 1 hr.
  3. Place wood chips in cast-iron smoking box and place on hot part of grill.
  4. Mix marinade ingredients, including Dijon mustard, garlic, thyme, parsley and paprika, and massage into sirloin tips.
  5. Place ingredients on skewers in following order: Red onion, pepper, mushroom, beef.
  6. Repeat 2 more times per skewer and top skewer off with mushrooms. Season well with kosher salt and freshly ground black pepper.
  7. Once wood chips are smoking, place skewers on upper rear shelf of grill.
  8. Turn grill to medium heat and close grill almost all the way to smoke for 10-15 min. Prop grill cover open with small rock if needed for additional air flow.
  9. Preheat grill on high heat for 5 min.
  10. Place skewers on hot part of the grill and grill until beef reaches 120°F. Crack a cold beer and enjoy!
